Beans and Celery Soup

A very healthy, tasty and filling soup.
I mixed kidney beans and black beans in this recipe. However, you can add any other bean you like.
If you are using raw beans, then you need to soak the beans for about 4-5 hrs and pressure cook them till done. You can avoid this by using canned beans. Totally up to you.

Ingredients:

  • Kidney Beans - 1/2 cup
  • Black Beans - 1/2 cup
  • Celery - 3 stalks
  • Onion- 1 small
  • Garlic - 2 cloves
  • Vegetable Broth - 4-5 cups
  • Butter - 1 tbsp
  • Basil, Parsley and Oregano Mix - 1/2 tsp ( Replace with your favorite herbs )
  • Salt - to taste
  • Pepper - to taste
Directions:
  • Heat butter in the saucepan. Saute minced garlic. Saute finely chopped onions till translucent.
  • Add vegetable broth, pressure cooked beans ( or canned ), Chopped celery.
  • Bring it to boil. Cook till celery is done. ( I prefer my celery a little crispy , so I do not cook it till very soft. But again, it's totally up to you how you like your's )
  • At the end, season with the herbs and salt and pepper.
  • Serve hot with garlic toast.

Carrot-Raddish Chatpata Salad

With Chapati , curry and raita, we like some kind of salad for accompaniment. We usually eat sliced cucumber, onion or beet root. This is a slight variation to that salad. We do not slice them but shred them and flavour them with chillies and lime juice.
You can make with with carrots alone or raddish ( daikon ) alone or both mixed together.

Carrots and Raddish Mixed

Ingredients :
  • Carrots - 2
  • White Raddish ( Daikon ) - 1 small or half of big one.
  • Lemon or Lime Juice - 3 tbsp or to taste
  • Salt - little bit for seasoning
  • Green Chillies - 2-3 or to taste
  • Chopped Cilantro - 2 springs

Directions:
  • Shred carrots and raddish in a mixing bowl. ( either or both )
  • Add all the other ingredients. Mix well. Adjust all the ingredients to taste.
  • You can either serve immediately or store it in fridge for a couple of days in a covered box. Raddish has a strong odor so storing it uncovered might spread the odor in the entire fridge.

With Raddish

You can add black pepper powder or chat masala too, if you like .
Enjoy this chatpata salad alongside with roti or paratha and curry.

Sweet Corn Soup

This creamy sweet corn soup is an excellent Indo-Chinese dish. A hot bowl of this soup makes a wonderful starter for the dinner on a cold day.

Ingredients:

  • Sweet Corn - 2 cups ( or Cream Style Corn - 1 can )
  • Oil - 1 tbsp
  • Green Onions - 2
  • Grated Ginger - 1 tsp
  • Minced Garlic - 1 tsp
  • Finely Chopped Vegetables - 1/2 cup ( carrots, beans, celery, cabbage )
  • Black Pepper - to taste
  • Water or Vegetable stock - 1/2 cup ( adjust accordingly )
  • Corn Starch - 2 tsp ( Mixed with a little water )
  • Salt - to taste
  • Lemon Juice - 1/2 tsp

Directions:

  • Chop all the vegetables very finely and keep aside.
  • Boil the corn in around 1 cup of water till the corns are soft.
  • Set aside 3-4 tbsp of corn kernels for garnishing later, grind the remaining corns into a smooth paste and strain.
  • You can avoid the above 2 steps if you use cream style corn can. This makes a very creamy soup. But if you do not have the cream style corn, you can boil , grind and strain like mentioned above.
  • Heat oil in a pot or a soup pan, sizzle ginger and garlic.
  • Add all the chopped vegetables and saute for a couple of minutes.
  • Add the strained corn paste or the can of cream style corn into the pot and mix well.
  • Add vegetable stock and bring it to boil. The quantity of stock depends on how thick you want your soup to be.
  • Add the corn starch mixture, salt and cook. Do not overcook the vegetables, we need it to be crunchy.
  • Garnish with chopped green onions, boiled sweet corn kernels, black pepper and lemon juice.
  • Serve hot !!
